Try a pumpkin smoothie!
Add to a blender:
- 1/2 cup canned or pureed pumpkin
- 2 cups milk, soy milk, almond milk or rice milk
- 1/4 cup sweetener, such as maple syrup
- 1 tsp cinnamon
- dash nutmeg
- 1/4 tsp cloves
Blend until well mixed. Serve cold.
If you use fresh-roasted pureed pumpkin, then you might be able to reduce the sweetener. Commercial canned pumpkin tends to have a stronger, slightly bitter overtone.
